I would charge it as a monthly class.  Something like this... class fee 10 dollars or free with a mininum 35 dollar order.  Then do a mystery hostess, each 35 dollar order is a ticket into the draw for all of the hostess benefits from the event.  Draw one person AFTER everyone has ordered, then the hostess of the night can choose her goodies.  It has worked for me in the past.  Also, bring  a guest who has never stamped with you before and receive one extra ticket in to the draw for every new friend.  Good luck!

I have been having card camps every month for several years and my customers love the way I run it. It is $12 (I just raised that from $10) for 5 cards, including envelopes.  The class is $6 if they place a $30 catalog order or FREE if they place a $50 catalog order.  All of the cardstock and ribbon is included in the envelope for each card. I have found that if you leave everything out on the table, people will take extras when they mess up.  They are much more careful when they know they only have that one piece! 
 
I would keep it to one demostration (you make it and they watch) and one make-and-take (you give them prepapred supplies--precut card stock and they put it together). This is the SU! recommendation for a workshop. The latter gives people a taste, but doesn't eat up your profit purchasing and preparing for them.

I've been  a demo. since Sept.  I ran into the same problem, people wanted to come, but didn't want to commit to spending xx amount of money for 6 months. So, I had to go with what worked for them. Here's what I do. I offer a "club" once a month. We make 2 cards and a simple 3-D project. They have the option of 1) ordering $30 in product OR 2) paying $10 cash.  I have 2 ladies that order every  month and 2-3 that only pay the $10. I have 1 or 2 that order every other month or so.  I explained to them in the beginning that the would receive free products, etc. if they would commit, but they didn't want to do that, so I take the hostess benefits and sometimes I use them to purchase a smaller item to include as a "thank you" with the ladies that always order, so they'll know that I appreciate them.  So far this is working well for me.  Hope that helps.
